Ingredients

  • 2 teaspoons minced ginger
  • 2 minced garlic cloves
  • 1/2 pound shrimp, peeled, deveined, and roughly chopped
  • 2 tablespoons minced cilantro
  • 1/3 cup diced water chestnuts
  • 1 egg white
  • 1 thinly sliced green onion
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 10 slices milk bread (or white bread), crusts removed and each cut into 2 triangles
  • 2 tablespoons toasted sesame seeds
  • 1/2 cup neutral oil

Instructions

  1. In a bowl, combine shrimp, ginger, garlic, cilantro, water chestnuts, egg white, green onion, sesame oil, salt, and white pepper. Mix until well combined.
  2. Spread about 1 tablespoon of the shrimp mixture onto each bread triangle.
  3. Sprinkle sesame seeds over the shrimp topping and gently press to adhere.
  4. In a skillet, heat oil over medium heat.
  5. Place toast shrimp-side down and fry for 2–3 minutes, then flip and fry the bread side for another 1–2 minutes until golden and crispy.
  6. Remove and drain on paper towels. Serve hot.

Notes

  • Use very fresh shrimp for the best flavor and texture.
  • Make sure the oil is hot enough before frying to prevent soggy toast.
  • You can prep the shrimp mixture a few hours ahead and refrigerate until ready to use.
  • Serve with sweet chili sauce or soy dipping sauce for extra flavor.
