Shoofly Pie is a traditional Pennsylvania Dutch dessert that features a rich, gooey molasses filling and a buttery, crumbly brown sugar topping. It’s the perfect comforting treat, especially when paired with a hot cup of coffee or tea. A must-try for any dessert lover!

  1. For the Pie Crust:

    • 1 unbaked 9-inch pie crust (homemade or store-bought)

    For the Crumb Topping:

    • 1 cup all-purpose flour
    • 1/2 cup brown sugar (light or dark)
    • 1/4 cup unsalted butter, cold and cubed
    • 1/2 tsp cinnamon (optional)

    For the Molasses Filling:

    1. 3/4 cup molasses (light or dark, depending on preference)
    2. 3/4 cup hot water
    3. 1/2 tsp baking soda
    4. 1 large egg, beaten

Instructions

  1. Prepare the Pie Crust: Preheat your oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch pie pan. Crimp the edges and set aside.
  2. Make the Crumb Topping: In a bowl, mix flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Set aside.
  3. Prepare the Molasses Filling: In a separate bowl, whisk together molasses and hot water. Stir in the baking soda, then whisk in the beaten egg until smooth.
  4. Assemble the Pie: Pour the molasses mixture into the unbaked pie crust. Sprinkle the crumb topping evenly over the top.
  5. Bake & Cool: Bake at 375°F (190°C) for 35-40 minutes, or until the filling is set and the top is golden brown. Let the pie cool completely before slicing.

Notes

  • You can use either light or dark molasses depending on your flavor preference. Dark molasses gives a deeper, richer flavor.
  • If you don’t have a homemade pie crust, a store-bought crust works just fine.
  • Let the pie cool completely to allow the filling to set properly before serving.
