These Shamrock Shake Cupcakes are the perfect treat for St. Patrick’s Day! With a fluffy vanilla cupcake base and creamy mint buttercream frosting, they bring the deliciousness of a Shamrock Shake in cupcake form. Top them with whipped cream and a cherry for the ultimate festive touch!

  1. For the Cupcakes:

    • 1 box vanilla cake mix (or your favorite homemade vanilla cupcake recipe)
    • 1 cup whole milk
    • ½ cup unsalted butter, melted
    • 3 large eggs
    • 1 tsp peppermint extract
    • Green food coloring (a few drops)

    For the Mint Buttercream Frosting:

    1. 1 cup unsalted butter, softened
    2. 3 cups powdered sugar
    3. 2 tbsp heavy cream (or milk)
    4. 1 tsp peppermint extract
    5. Green food coloring (as needed)
    6. Whipped cream & maraschino cherries (for garnish)

Instructions

  • Make the Cupcakes:

    • Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
    • In a bowl, mix cake mix, milk, melted butter, eggs, peppermint extract, and green food coloring until smooth.
    • Fill each cupcake liner ¾ full with batter.
    • Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
    • Let cool completely before frosting.
  • Make the Frosting:

    • Beat softened butter until fluffy.
    • Gradually add powdered sugar, mixing until smooth.
    • Add peppermint extract, heavy cream, and green food coloring, beating until creamy.
  • Frost & Decorate:

    • Pipe the frosting onto cooled cupcakes.
    • Top with whipped cream and a maraschino cherry for the full Shamrock Shake effect!

Notes

  • You can adjust the amount of green food coloring to achieve your desired shade of green.
  • The frosting can be made ahead of time and stored in the refrigerator, just bring it back to room temperature before using.
