Ingredients

    2. 1 tablespoon butter

For the Sausage and Peppers:

      • 2 sausage links (smoked or andouille, sliced into rounds)
      • 1 green bell pepper, sliced
      • 1/2 onion, sliced
      • 1 tablespoon olive oil
      • Salt and black pepper to taste

For the Creamy Grits:

    • 1 cup grits (stone-ground or quick-cooking)
    • 4 cups water or milk (or a mix of both)
    • 2 tablespoons butter
    • 1/2 cup shredded cheese (optional, for cheesy grits)
    • Salt and black pepper to taste

Instructions

For the Scrambled Eggs:

  1. In a bowl, whisk together eggs, milk (or cream), salt, and pepper until well combined.
  2. Heat butter in a non-stick skillet over medium heat.
  3. Pour in the egg mixture and cook gently, stirring occasionally, until the eggs are soft and creamy.
  4. Remove from heat and set aside. Garnish with fresh herbs, if desired.

For the Sausage and Peppers:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sausage slices and cook until browned.
  3. Add the bell pepper and onion slices and cook until softened, about 5-7 minutes.
  4. Season with salt and black pepper to taste.

For the Creamy Grits:

  1. In a saucepan, bring water (or a milk-water mix) to a boil.
  2. Stir in the grits, reduce heat to low, and cook according to package instructions.
  3. Once cooked, stir in butter, cheese (if using), and season with salt and pepper.

Notes

  • For a richer version, use all cream in the scrambled eggs and milk in the grits.
  • If you prefer a more savory flavor, add a sprinkle of Parmesan cheese to the scrambled eggs or grits.
