Description

Salted Caramel Panna Cotta with Praline is a rich, creamy dessert featuring a velvety panna cotta with a salted caramel flavor, topped with crunchy, sweet pecan praline.


Ingredients

  • 1 1/2 cups (375 ml) pouring cream
  • 3/4 cup full cream milk
  • 3/4 cup caster sugar
  • 2 x 5 gram gold strength gelatine leaves
  • 1/2 teaspoon salt flakes
  • For the Pecan Praline:
  • 1/2 cup caster sugar
  • 1/2 cup toasted pecans

Instructions

  1. Make the Panna Cotta: In a medium saucepan, heat the cream and milk until just under boiling point. Remove from heat.
  2. Place the gelatine leaves in a bowl of cold water, ensuring they are submerged.
  3. In a small heavy-based saucepan, add the sugar over medium heat. Let it melt without stirring, but gently swirl the pan around.
  4. Once the sugar turns a dark amber color, quickly add the warm cream mixture to the caramel, stirring to combine while keeping the mixture on the heat. Some caramel may solidify, but keep whisking until the caramel dissolves.
  5. Squeeze out any excess water from the gelatine leaves and whisk them into the caramel mixture until fully dissolved.
  6. Add salt and mix well.
  7. Pour the mixture into small molds or dishes and refrigerate for at least 4 hours to set.
  8. Prepare the Pecan Praline: Toast the pecans in the oven at 180°C (355°F) for 10 minutes, then remove.
  9. Lightly grease a tray or pan and evenly place the toasted pecans on the base.
  10. Place sugar in a small pan over medium heat, allowing it to melt slowly. Once fully melted and golden to deep brown, pour the caramel over the pecans.
  11. Let the praline cool completely.
  12. Once cool, crush the praline using a rolling pin inside a plastic bag to get desired size pieces.
  13. Assemble and Serve: Spoon the praline over the set panna cotta just before serving.

Notes

  • Ensure the gelatine is fully dissolved in the caramel mixture to avoid any lumps.
  • For a smoother texture, strain the caramel mixture before pouring it into the molds.
