Description

A light and fresh dish featuring creamy avocado halves stuffed with a flavorful salmon mixture made with Greek yogurt, celery, and Dijon mustard.


Ingredients

  • ½ cup nonfat plain Greek yogurt
  • ½ cup diced celery
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lime juice
  • 2 teaspoons mayonnaise
  • 1 teaspoon Dijon mustard
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 2 (5 ounce) cans salmon, drained, flaked, skin and bones removed
  • 2 avocados
  • Chopped chives for garnish

Instructions

  1. In a medium bowl, combine Greek yogurt, celery, parsley, lime juice, mayonnaise, Dijon mustard, salt, and pepper.
  2. Gently fold in the flaked salmon until well combined.
  3. Cut avocados in half and remove the pits.
  4. Spoon the salmon mixture into the avocado halves, dividing evenly.
  5. Garnish with chopped chives and serve immediately.

Notes

  • This dish is perfect for a light lunch or appetizer.
  • For extra flavor, you can sprinkle some red pepper flakes on top for a hint of spice.
  • If you don’t have canned salmon, fresh cooked salmon can be used as a substitute.
