Pasta & Proteins
- 12 ounces rotini pasta, cooked and drained
- 1 pound sausage (any kind you like)
- 1 pound ground beef
Veggies & Seasoning
- ½ yellow onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Sauce
- 2 (10-ounce) cans Rotel, undrained
- 16 ounces Velveeta cheese, cubed
- ½ cup milk (or more as needed)
- Chopped fresh parsley, for garnish
Instructions
Cook Meat
- In a large skillet over medium heat, cook the sausage and ground beef until browned. Drain excess fat.
Sauté Veggies
- Add diced onion, red bell pepper, and yellow bell pepper to the skillet. Cook until softened, about 5 minutes.
- Stir in onion powder and garlic powder.
Make Sauce
- Add both cans of Rotel (with liquid) and cubed Velveeta to the skillet.
- Stir until cheese is melted and sauce is creamy.
- Slowly stir in milk until the sauce reaches your desired consistency.
Combine & Serve
- Toss the cooked rotini pasta into the sauce and stir until well coated.
- Garnish with chopped fresh parsley and serve warm.
Notes
- Use spicy sausage or hot Rotel for extra heat.
- Swap Velveeta for shredded cheddar or pepper jack if preferred.
