Pasta & Proteins

  • 12 ounces rotini pasta, cooked and drained
  • 1 pound sausage (any kind you like)
  • 1 pound ground beef

Veggies & Seasoning

  • ½ yellow onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Sauce

  • 2 (10-ounce) cans Rotel, undrained
  • 16 ounces Velveeta cheese, cubed
  • ½ cup milk (or more as needed)
  • Chopped fresh parsley, for garnish

Instructions

Cook Meat

  1. In a large skillet over medium heat, cook the sausage and ground beef until browned. Drain excess fat.

Sauté Veggies

  1. Add diced onion, red bell pepper, and yellow bell pepper to the skillet. Cook until softened, about 5 minutes.
  2. Stir in onion powder and garlic powder.

Make Sauce

  1. Add both cans of Rotel (with liquid) and cubed Velveeta to the skillet.
  2. Stir until cheese is melted and sauce is creamy.
  3. Slowly stir in milk until the sauce reaches your desired consistency.

Combine & Serve

  1. Toss the cooked rotini pasta into the sauce and stir until well coated.
  2. Garnish with chopped fresh parsley and serve warm.

Notes

  • Use spicy sausage or hot Rotel for extra heat.
  • Swap Velveeta for shredded cheddar or pepper jack if preferred.
  • Leftovers reheat well—add a splash of milk when warming.
  • You can also use penne or shells instead of rotini.
  • Top with crushed tortilla chips or jalapeño slices for a fun crunch.
