This Roasted Veggie Delight is the perfect side dish—crispy on the outside and tender on the inside! Packed with flavor from garlic, Italian seasoning, and a medley of fresh vegetables. A quick and easy way to enjoy healthy roasted veggies! Perfect for any meal.

Ingredients

  1. 4 cups potatoes, diced
  2. 2 cups carrots, sliced
  3. 2 cups zucchini, sliced
  4. 2 tbsp olive oil
  5. 1 tsp garlic powder
  6. 1 tsp Italian seasoning
  7. 1/2 tsp salt
  8. 1/2 tsp black pepper

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, combine potatoes, carrots, and zucchini.
  • Drizzle olive oil over the veggies and toss to coat evenly.
  • Sprinkle garlic powder, Italian seasoning, salt, and black pepper over the veggies. Mix well.
  • Spread the veggies in a single layer on a baking sheet.

 

  • Roast in the preheated oven for 25-30 minutes, stirring halfway through, until veggies are tender and golden brown

Notes

  • Feel free to add other veggies like bell peppers or Brussels sprouts for extra variety!
  • You can also use sweet potatoes for a slightly sweeter taste.

 

  • For a crispy finish, broil for the last 3-5 minutes of roasting.
