Description

These Roasted Potatoes with Baked Feta and Garlic are the perfect combination of crispy, golden potatoes and creamy, slightly caramelized feta cheese. The garlic adds a delicious flavor that takes this dish to the next level. It’s a simple yet savory side dish or a satisfying vegetarian meal.

  1. For the Roasted Potatoes:

    • 2 lbs baby potatoes (halved or quartered)
    • 3 tbsp olive oil
    • 1 tsp salt
    • ½ tsp black pepper
    • ½ tsp smoked paprika
    • ½ tsp dried oregano
    • ½ tsp garlic powder

    For the Baked Feta & Garlic:

    • 1 block (8 oz) feta cheese
    • 3 cloves garlic, minced
    • 1 tbsp olive oil
    • ½ tsp red pepper flakes (optional)
    • ½ tsp dried thyme or oregano

    For Garnish:

    1. 2 tbsp fresh parsley or basil, chopped
    2. 1 tbsp lemon juice (optional, for brightness)

Instructions

  • Roast the Potatoes
    Preheat oven to 425°F (220°C).
    In a large bowl, toss potatoes with olive oil, salt, pepper, smoked paprika, oregano, and garlic powder.
    Spread potatoes evenly on a lined baking sheet and roast for 25-30 minutes, flipping halfway through, until crispy and golden brown.

  • Bake the Feta & Garlic
    While potatoes roast, place the feta block in a small baking dish.
    Drizzle with olive oil, sprinkle with red pepper flakes, garlic, and thyme.
    Bake alongside the potatoes for the last 12-15 minutes, until the feta is soft and slightly golden.

  • Assemble & Serve
    Remove potatoes and feta from the oven.
    Crumble the warm feta over the roasted potatoes.
    Garnish with fresh parsley and a squeeze of lemon juice.
    Serve immediately and enjoy!
