For the Roasted Potatoes:
- 2 lbs baby potatoes (halved or quartered)
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp garlic powder
For the Baked Feta & Garlic:
- 1 block (8 oz) feta cheese
- 3 cloves garlic, minced
- 1 tbsp olive oil
- ½ tsp red pepper flakes (optional)
- ½ tsp dried thyme or oregano
For Garnish:
- 2 tbsp fresh parsley or basil, chopped
- 1 tbsp lemon juice (optional, for brightness)
Instructions

Roast the Potatoes
Preheat oven to 425°F (220°C).
In a large bowl, toss potatoes with olive oil, salt, pepper, smoked paprika, oregano, and garlic powder.
Spread potatoes evenly on a lined baking sheet and roast for 25-30 minutes, flipping halfway through, until crispy and golden brown. -
Bake the Feta & Garlic
While potatoes roast, place the feta block in a small baking dish.
Drizzle with olive oil, sprinkle with red pepper flakes, garlic, and thyme.
Bake alongside the potatoes for the last 12-15 minutes, until the feta is soft and slightly golden. -
Assemble & Serve
Remove potatoes and feta from the oven.
Crumble the warm feta over the roasted potatoes.
Garnish with fresh parsley and a squeeze of lemon juice.
Serve immediately and enjoy!
