This hearty, flavorful, and nutrient-packed one-pan meal is perfect for a quick dinner. Packed with roasted sweet potatoes, crispy veggies, and savory chicken sausage, it’s a delicious and balanced meal.
Ingredients

2 chicken sausages, sliced

1 medium sweet potato, sliced into half-moons

1 zucchini, sliced into half-moons

1 cup broccoli florets

½ small onion, sliced

2 tbsp olive oil

1 tbsp soy sauce or balsamic glaze

½ tsp garlic powder
-
½ tsp smoked paprika
-
½ tsp salt

½ tsp black pepper
-
1 tsp sesame seeds (optional)
Instructions

Roast the Sweet Potatoes:
Heat a pan over medium heat and add 1 tbsp olive oil.
Add sweet potatoes and cook for 8-10 minutes until golden and tender. Remove and set aside. -
Cook the Chicken Sausage:
In the same pan, add sliced chicken sausage and cook until browned, about 4-5 minutes. Remove and set aside. -
Sauté the Vegetables:
Add another tbsp of olive oil to the pan.
Toss in broccoli, zucchini, and onions. Cook for 5-7 minutes until slightly caramelized but still crisp. -
Combine & Flavor:
Return the sweet potatoes and chicken sausage to the pan.
Add soy sauce (or balsamic glaze), garlic powder, smoked paprika, salt, and black pepper. Stir well.

Sprinkle with sesame seeds if desired and serve warm!
