This hearty, flavorful, and nutrient-packed one-pan meal is perfect for a quick dinner. Packed with roasted sweet potatoes, crispy veggies, and savory chicken sausage, it’s a delicious and balanced meal.
2 chicken sausages, sliced
1 medium sweet potato, sliced into half-moons
1 zucchini, sliced into half-moons
1 cup broccoli florets
½ small onion, sliced
2 tbsp olive oil
1 tbsp soy sauce or balsamic glaze
½ tsp garlic powder
½ tsp smoked paprika
½ tsp salt
½ tsp black pepper
1 tsp sesame seeds (optional)
Roast the Sweet Potatoes:
Heat a pan over medium heat and add 1 tbsp olive oil.
Add sweet potatoes and cook for 8-10 minutes until golden and tender. Remove and set aside.
Cook the Chicken Sausage:
In the same pan, add sliced chicken sausage and cook until browned, about 4-5 minutes. Remove and set aside.
Sauté the Vegetables:
Add another tbsp of olive oil to the pan.
Toss in broccoli, zucchini, and onions. Cook for 5-7 minutes until slightly caramelized but still crisp.
Combine & Flavor:
Return the sweet potatoes and chicken sausage to the pan.
Add soy sauce (or balsamic glaze), garlic powder, smoked paprika, salt, and black pepper. Stir well.
Serve & Enjoy:
Sprinkle with sesame seeds if desired and serve warm!
You can substitute balsamic glaze for soy sauce for a sweeter flavor.
Feel free to add more veggies like bell peppers or carrots for extra nutrients.
