This simple and flavorful roasted broccoli and carrots dish is tossed with garlic, onion, smoked paprika, and a hint of lemon for the perfect side to any meal. Easy, healthy, and delicious!

Ingredients

  1. 2 cups broccoli florets
  2. 2 cups carrots, sliced
  3. 3 tbsp olive oil
  4. 1 tsp garlic powder
  5. 1 tsp onion powder
  6. 1 tsp smoked paprika
  7. Salt and pepper to taste
  8. Juice of 1 lemon
  9. Fresh parsley, chopped (for garnish)

Instructions

  • Preheat the Oven
    Preheat the oven to 425°F (220°C).

  • Prepare the Vegetables
    In a large bowl, combine broccoli florets and sliced carrots.

  • Season the Vegetables
    Drizzle with olive oil and sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until evenly coated.

  • Roast to Perfection
    Spread the vegetables in a single layer on a baking sheet.
    Roast for 20-25 minutes, stirring halfway, until tender and slightly caramelized.

 

  • Finish & Serve
    Remove from oven and drizzle with fresh lemon juice.
    Toss gently and garnish with chopped parsley before serving.

Notes

  • For extra crispness, you can roast the vegetables a few extra minutes, but watch carefully to avoid burning.

 

  • You can substitute the smoked paprika with regular paprika for a milder flavor.
