Ingredients
4 cups frozen Tater Tots
4 large eggs

For the Sausage Gravy:
1/2 pound breakfast sausage
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven per package instructions and bake Tater Tots until crispy (about 20–25 minutes). Set aside. In a skillet over medium heat, cook sausage, breaking apart until browned. Sprinkle in flour, stir to combine, and cook 1–2 minutes. Gradually stir in milk, cooking until thickened (about 5 minutes). Season with salt and pepper. Meanwhile, scramble eggs in a non-stick pan until fully cooked. Assemble bowls by dividing Tater Tots, topping with scrambled eggs, sausage gravy, cheddar cheese, and optional green onions. Serve immediately.
Notes
