  • 6 medium Italian sausages (375 g)
  • 1 tbsp olive oil
  • 1 sweet red pepper, diced
  • 1 cup long grain rice
  • 3¼ cups beef broth
  • 1½ tbsp fresh chives, chopped
  • 3 tbsp fresh parsley, chopped
  • 2 tbsp mixed seeds (optional)
  • Salt and pepper, to taste

  1. In a large skillet over medium heat, cook Italian sausages until browned and fully cooked, about 10–12 minutes. Remove from skillet and slice into bite-sized pieces.
  2. In the same skillet, heat olive oil. Add diced red pepper and sauté for 2–3 minutes until slightly softened.
  3. Stir in the rice and cook for 1–2 minutes, allowing it to lightly toast.
  4. Pour in the beef broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes or until the rice is tender and liquid is absorbed.
  5. Return the sliced sausages to the skillet. Add chopped chives, parsley, and mixed seeds if using. Season with salt and pepper to taste.
  6. Stir everything together and cook for another 2 minutes to heat through. Serve warm.

Notes

  • Substitute chicken or veggie broth for beef broth if preferred.
  • Use hot or mild Italian sausage based on your spice preference.
