- 6 medium Italian sausages (375 g)
- 1 tbsp olive oil
- 1 sweet red pepper, diced
- 1 cup long grain rice
- 3¼ cups beef broth
- 1½ tbsp fresh chives, chopped
- 3 tbsp fresh parsley, chopped
- 2 tbsp mixed seeds (optional)
- Salt and pepper, to taste

- In a large skillet over medium heat, cook Italian sausages until browned and fully cooked, about 10–12 minutes. Remove from skillet and slice into bite-sized pieces.
- In the same skillet, heat olive oil. Add diced red pepper and sauté for 2–3 minutes until slightly softened.
- Stir in the rice and cook for 1–2 minutes, allowing it to lightly toast.
- Pour in the beef broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes or until the rice is tender and liquid is absorbed.
- Return the sliced sausages to the skillet. Add chopped chives, parsley, and mixed seeds if using. Season with salt and pepper to taste.
- Stir everything together and cook for another 2 minutes to heat through. Serve warm.
