This classic Reuben Sandwich is a hearty, flavorful combination of corned beef, Swiss cheese, sauerkraut, and homemade Russian dressing all sandwiched between buttery, crispy marble rye bread. Perfect for lunch or dinner!

  1. ½ cup mayonnaise
  2. 2 tablespoons ketchup
  3. ½ teaspoon salt
  4. ½ teaspoon pepper
  5. 1 teaspoon Worcestershire sauce
  6. 2 tablespoons lemon juice
  7. ¼ cup salted butter, softened
  8. 8 slices marble rye bread
  9. 8 slices Swiss cheese
  10. ¾ pound corned beef
  11. 2 cups sauerkraut, drained

Instructions

  • Make the Russian Dressing: In a small bowl, whisk together mayonnaise, ketchup, salt, pepper, Worcestershire sauce, and lemon juice.
  • Prepare the Bread: Butter one side of each slice of bread. Spread a spoonful of the Russian dressing on the other side of each piece of bread.
  • Assemble the Sandwich: For each sandwich, layer one piece of bread with 1 slice of Swiss cheese, several slices of corned beef, ½ cup sauerkraut, another slice of Swiss cheese, and top with a second piece of bread. The dressing sides should face in, with the buttered sides facing out. Repeat for 4 sandwiches.
  • Grill the Sandwiches: Heat a non-stick skillet over medium heat. Place each sandwich into the skillet, cooking more than one at a time if the skillet allows. Cook on the first side until the bread is browned, and the cheese begins to melt. Carefully flip the sandwich and cook on the other side.
  • Finish Cooking: Continue cooking until both sides are browned, the cheese is melted, and the sandwich is heated through. Lower the heat if needed to ensure the cheese melts without burning the bread.
  • Serve and Enjoy: Remove from the skillet, slice, and serve immediately.

Notes

  • Adjust the amount of Russian dressing to your preference.
  • For a crispier exterior, you can add extra butter to the skillet while cooking.
  • You can also use rye bread or a different bread of your choice.
  • This recipe can easily be scaled to make more sandwiches.
