Description

A light and refreshing cucumber lemonade perfect for hot summer days! This simple, hydrating drink combines cucumber, fresh lemon juice, and a touch of sweetness for a cool treat.

Ingredients

Scale
  1. 2 large cucumbers, peeled and chopped
  2. 1 cup fresh lemon juice (from about 45 lemons)
  3. ½ cup honey, sugar, agave nectar, or simple syrup (adjust to taste)
  4. 4 cups cold water (or sparkling water for a bubbly version)
  5. Ice cubes
  6. Optional Garnish: Lemon slices, cucumber rounds or ribbons, fresh mint sprigs, edible flowers

Instructions

  • Puree the cucumber: In a blender, combine the chopped cucumbers and blend until smooth.
  • Strain the puree: Strain the cucumber puree through a fine-mesh sieve into a pitcher, pressing down on the solids to extract as much liquid as possible. Discard the solids.
  • Mix ingredients: Add the fresh lemon juice and your choice of sweetener (honey, sugar, agave, or simple syrup) to the pitcher. Stir until the sweetener dissolves completely.
  • Add water: Pour in the cold water (or sparkling water for bubbles) and mix well.
  • Chill (optional): For a refreshing touch, chill the lemonade in the fridge for at least 30 minutes before serving.
  • Serve: Fill glasses with ice cubes and pour the cucumber lemonade over the ice.
  • Garnish: Add lemon slices, cucumber rounds or ribbons, fresh mint sprigs, or edible flowers for an extra decorative touch.

Notes

  • Herbs: Blend in fresh mint, rosemary, or basil with the cucumbers for a unique flavor. Alternatively, muddle the herbs in the pitcher before adding the other ingredients.
  • Spice: For a spicy twist, add a small piece of fresh ginger (peeled and chopped) to the blender.
  • Lime: Swap half of the lemon juice with lime juice to change up the citrus flavor.
  • Sweetness: Taste before adding all the water and adjust the sweetener to your preference.
  • Adult Version: Add a shot of vodka or gin to each serving for a refreshing cocktail.
