This refreshing Cucumber Agua Fresca is a light, cooling drink made with fresh cucumbers, mint, lime, and a hint of ginger — perfect for hot summer days or a healthy, hydrating sip anytime.

- 2 large English cucumbers, cut into chunks
- 1 cup freshly squeezed lime juice (from 8–10 limes)
- ⅔ cup granulated sugar
- 10–15 fresh mint leaves
- 1 piece fresh ginger (1–2 inches)
- 4 cups water, divided
Instructions
- In a blender, combine cucumbers, lime juice, sugar, mint leaves, ginger, and 2 cups of water. Blend until smooth.
- Strain the mixture through a fine mesh sieve into a pitcher, pressing down to extract all the juice.
- Add the remaining 2 cups of water and stir well.
- Chill in the refrigerator before serving over ice. Garnish with extra mint leaves if desired.

- Adjust sugar to taste depending on the sweetness of your cucumbers.
- Use a high-powered blender for a smoother consistency.
- Ginger adds a subtle kick — reduce or omit if preferred.
