- 1/2 cup brown sugar, tightly packed
- 1 large egg (55–60g / 2 oz)
- 1 1/2 cups all-purpose flour
- 1 1/2 cups rolled oats (not quick or steel-cut)
- 1/2 teaspoon baking powder
- Pinch of salt
- 1 cup raspberry jam (or your preferred flavor)

- Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
- In a mixing bowl, combine melted butter, brown sugar, and egg. Mix until smooth.
- Add flour, oats, baking powder, and salt. Stir until fully combined and crumbly.
- Press two-thirds of the oat mixture evenly into the bottom of the prepared pan.
- Spread the raspberry jam evenly over the base layer.
- Crumble the remaining oat mixture over the top of the jam layer.
- Bake for 30–35 minutes, or until golden brown on top.
- Let cool completely in the pan before slicing into bars.
Notes
- Use your favorite jam or preserves to customize these bars.
- For extra crunch, sprinkle some chopped nuts on top before baking.
