  • 125g (1 stick) unsalted butter, melted
  • 1/2 cup brown sugar, tightly packed
  • 1 large egg (55–60g / 2 oz)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups rolled oats (not quick or steel-cut)
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 cup raspberry jam (or your preferred flavor)

  1. Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  2. In a mixing bowl, combine melted butter, brown sugar, and egg. Mix until smooth.
  3. Add flour, oats, baking powder, and salt. Stir until fully combined and crumbly.
  4. Press two-thirds of the oat mixture evenly into the bottom of the prepared pan.
  5. Spread the raspberry jam evenly over the base layer.
  6. Crumble the remaining oat mixture over the top of the jam layer.
  7. Bake for 30–35 minutes, or until golden brown on top.
  8. Let cool completely in the pan before slicing into bars.
