Rajma Kebab:
- 1½ cups rajma (kidney beans), boiled or canned
- 2 green chilies
- 1 inch ginger
- 2 cloves garlic
- 1 tbsp oil
- 1 medium onion, finely chopped
- 1 small beetroot, grated
- 2 medium potatoes, boiled and grated
- 1½ tsp taco seasoning
- ½ tsp smoked paprika
- ½ tsp red chili powder
- 1 tsp roasted cumin powder
- ½ tsp oregano
- ½ tsp garam masala
- 2 tsp soy sauce
- 2 tsp lemon juice
- Salt, to taste
- 2 tbsp cilantro, finely chopped
- ¼ cup breadcrumbs
- Ghee or oil, for pan frying
Veggies:
- 1 medium onion, thinly sliced
- ¼ cup multicolor cabbage, thinly sliced
- 1 carrot, thinly sliced
- 2 tbsp mixed color bell peppers, sliced
Slider Assembly:
- 9 slider buns
- 3 cups mint cilantro chutney
- 1 cup cheese
- 3 tbsp sriracha mayo
- 2 tbsp herbed garlic butter (2 tbsp melted butter mixed with 1 clove grated garlic and mixed herbs)
- Avocado crema (see Tandoori Paneer Tacos with Avocado Crema recipe)
- Strawberry salsa (see Strawberry Salsa recipe)
Instructions
- In a food processor, blend green chilies, ginger, and garlic until smooth.
- Heat oil in a pan and sauté onions until translucent. Add the chili-ginger-garlic paste and cook for 1–2 minutes.
- In a large bowl, mash the rajma beans coarsely. Add sautéed onions, beetroot, boiled potatoes, spices, soy sauce, lemon juice, cilantro, and breadcrumbs. Mix well to combine.
- Shape mixture into small patties. Heat ghee or oil in a pan and fry the patties on medium heat until golden and crispy on both sides. Drain on paper towels.
- Toss the sliced veggies lightly if desired.
- To assemble sliders, spread herbed garlic butter on buns and toast lightly. Spread mint cilantro chutney and sriracha mayo on buns.
- Layer the bottom bun with a rajma kebab, cheese, veggies, avocado crema, and strawberry salsa. Top with the other half of the bun.
- Serve immediately.
Notes
- For extra binding, you can add an egg or a flax egg to the kebab mixture.
- If fresh rajma isn’t available, canned beans work perfectly.
- Customize spice levels by adjusting green chilies and red chili powder.
- Serve with extra chutney or sriracha mayo on the side for dipping.
