Description

This Quick Sloppy Joe Pasta Casserole combines the classic flavors of sloppy joe in a comforting, cheesy pasta bake. The ground beef, vegetables, and tangy sloppy joe sauce are tossed with rotini pasta and melted cheddar cheese for an easy, family-friendly dinner. Perfect for busy nights!


Ingredients

  1. Main Ingredients:

    • 1 pound ground beef
    • 16 ounces rotini, cooked
    • 30 ounces (2 15 oz cans) sloppy joe sauce

    Vegetables:

    • 1 small onion, diced
    • 1 green pepper, diced

    Cheese:

    1. 2 cups shredded cheddar cheese, divided

Instructions

  1. In a large pan, add the ground beef, onion, and green pepper. Cook until the ground beef is no longer pink and the vegetables are tender. Drain off any excess grease.
  2. Add in the sloppy joe sauce and stir to combine. Heat for a few minutes until it simmers.
  3. Add the cooked rotini pasta to the pan and stir to coat the pasta with the sauce.
  4. Add 1–1½ cups shredded cheddar cheese and stir until melted and fully combined.
  5. Top the casserole with the remaining cheese and heat on low until the cheese melts (you can also cover the pan to help melt the cheese faster). Garnish with parsley if desired.

Notes

  • You can substitute ground turkey or chicken for ground beef for a lighter version.
  • For extra flavor, add a dash of hot sauce or Worcestershire sauce to the sloppy joe mixture.

 

  • If you prefer a crunchier top, bake the casserole in the oven at 350°F for 10-15 minutes instead of melting the cheese on the stove.
