Description

Quick & Easy Shepherd’s Pie is a hearty and comforting one-dish meal that layers savory ground meat with tender vegetables and a fluffy mashed potato topping. Ready in under 45 minutes, it is perfect for busy weeknights and can be customized to suit various tastes and dietary preferences.

Ingredients

Scale

Meat Filling

  • 1 lb ground lamb or beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, chopped
  • 1 cup peas
  • 1 cup corn
  • 1/2 cup broth or stock
  • 1 tablespoon Worcestershire sauce

Mashed Potato Topping

  • 2 lbs potatoes, peeled and chopped
  • 4 tablespoons butter
  • 1/4 to 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. Prepare the mashed potatoes: Peel and chop potatoes into even chunks, then boil until tender. Drain well, then mash with butter and milk until smooth and creamy. Season with salt and pepper to taste.
  2. Cook the meat filling: Heat a large skillet over medium heat and sauté diced onions and garlic until fragrant and translucent. Add ground meat, browning evenly while breaking it up with a spoon.
  3. Add vegetables and flavor: Mix in chopped carrots, peas, and corn. Pour in broth and Worcestershire sauce, then let simmer gently until the vegetables soften and the mixture thickens slightly.
  4. Assemble the pie: Transfer the meat and vegetable mixture into a baking dish, spreading it evenly. Carefully layer the mashed potatoes on top, smoothing the surface with a spatula or fork to create some texture for browning.
  5. Bake until golden: Place the assembled pie in a preheated oven at 400°F (200°C) and bake for 20-25 minutes, or until the mashed potatoes develop a golden, lightly crisp crust.

Notes

  • Drain excess fat after cooking the meat to avoid a greasy filling.
  • Use warm potatoes when mashing to achieve a silky texture without lumps.
  • Rough up the potato topping with a fork to encourage browning and add crunch.
  • Add vegetables toward the end of simmering to keep them vibrant and tender.
  • Let the pie cool slightly after baking for easier slicing.
