A comforting and hearty Potato Kielbasa Soup, made with tender potatoes, carrots, celery, and savory kielbasa sausage in a rich, creamy broth. Perfect for a cozy dinner on a chilly day!

  1. 1 tablespoon olive oil
  2. 1 lb. kielbasa sausage, sliced (turkey kielbasa can be used as an alternative)
  3. 1 medium onion, chopped
  4. 2 cloves garlic, minced
  5. 4 cups chicken broth
  6. 4 large potatoes, peeled and cubed
  7. 3 large carrots, peeled and sliced
  8. 2 celery stalks, chopped
  9. 1 teaspoon dried thyme
  10. 1 teaspoon dried parsley
  11. Salt and pepper to taste
  12. 1 cup heavy cream

Instructions

  • Cook sausage: In a large pot, heat olive oil over medium heat. Add sliced kielbasa and cook until browned. Remove the kielbasa from the pot and set aside.
  • Sauté vegetables: In the same pot, add the chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook until fragrant, about 1 minute.
  • Add broth and veggies: Pour in chicken broth. Add cubed potatoes, sliced carrots, and chopped celery. Stir in dried thyme and parsley. Season with salt and pepper.
  • Simmer: Bring the mixture to a boil, then reduce heat and simmer until potatoes and carrots are tender, about 20 minutes.
  • Finish soup: Stir in heavy cream and return the browned kielbasa to the pot. Simmer for an additional 5 minutes, until heated through.
  • Serve: Serve the soup hot, garnished with additional parsley if desired.

Notes

  • You can substitute turkey kielbasa for a lighter option.
  • For extra flavor, add a pinch of smoked paprika or crushed red pepper flakes.
