A budget-friendly alternative to traditional prime rib, this Poor Man’s Prime Rib is tender, flavorful, and easy to make! A simple seasoning mix on a beef eye of round roast creates a delicious roast perfect for any occasion.

  1. 3-pound beef eye of round roast
  2. 1 tsp garlic powder
  3. 1 tsp onion powder
  4. Salt and pepper to taste

Instructions

  • Preheat the oven to 500°F (260°C).
  • Season the roast with salt, pepper, garlic powder, and onion powder, then place it in a roasting pan or baking dish. Do not cover or add water.
  • Place the roast in the preheated oven, then reduce the temperature to 475°F (245°C).
  • Roast for 21 minutes (7 minutes per pound), then turn off the oven and leave the roast inside for 2 1/2 hours. Do not open the door during this time.
  • After 2 1/2 hours, remove the roast from the oven. The internal temperature should be at least 145°F (65°C).

 

  • Carve the roast into thin slices to serve.

Notes

  • The key to this recipe is to not open the oven during the resting time, which helps maintain the roast’s tenderness.

 

  • For a more traditional prime rib flavor, feel free to add herbs like rosemary or thyme to the seasoning mix.
