- 1 tbsp unsalted butter
- 1 yellow onion, diced
- 1 garlic clove, minced
- 1 carrot, peeled and cut into half-moons
- 12 oz ground pork
- 1 tsp black pepper
- 1 tsp sweet paprika
- 1 tsp marjoram
- ¾ cup white rice
- 2 cups puréed tomatoes
- 3 cups chicken broth
- ½ small green cabbage, chopped
- Chopped dill, for serving
Instructions
- Prepare your ingredients: chop the cabbage, dice the onion, mince the garlic, and peel and cut the carrot into half-moons.
- Heat butter over medium heat in a large pot. Add garlic, onion, and carrot, and sauté for 3 minutes.
- Add ground pork, breaking it up into pieces. Stir in pepper, paprika, and marjoram. Then, add rice.
- Pour in puréed tomatoes and chicken broth. Bring to a boil, then add cabbage. Cover and simmer for 15 minutes, or until the rice is cooked through.
- Taste and adjust salt, then finish with chopped dill before serving. Enjoy!
Notes
- For a heartier soup, add more rice or use brown rice for added texture.
- If you prefer a spicier dish, add a pinch of red pepper flakes or cayenne pepper.
- For a vegetarian version, substitute the ground pork with plant-based protein or beans.
