Description

Polish Stuffed Cabbage Soup is a hearty and flavorful dish made with ground pork, vegetables, rice, and a delicious tomato broth, topped with fresh dill for a comforting meal.


Ingredients

  • 1 tbsp unsalted butter
  • 1 yellow onion, diced
  • 1 garlic clove, minced
  • 1 carrot, peeled and cut into half-moons
  • 12 oz ground pork
  • 1 tsp black pepper
  • 1 tsp sweet paprika
  • 1 tsp marjoram
  • ¾ cup white rice
  • 2 cups puréed tomatoes
  • 3 cups chicken broth
  • ½ small green cabbage, chopped
  • Chopped dill, for serving

Instructions

  1. Prepare your ingredients: chop the cabbage, dice the onion, mince the garlic, and peel and cut the carrot into half-moons.
  2. Heat butter over medium heat in a large pot. Add garlic, onion, and carrot, and sauté for 3 minutes.
  3. Add ground pork, breaking it up into pieces. Stir in pepper, paprika, and marjoram. Then, add rice.
  4. Pour in puréed tomatoes and chicken broth. Bring to a boil, then add cabbage. Cover and simmer for 15 minutes, or until the rice is cooked through.
  5. Taste and adjust salt, then finish with chopped dill before serving. Enjoy!

Notes

  • For a heartier soup, add more rice or use brown rice for added texture.
  • If you prefer a spicier dish, add a pinch of red pepper flakes or cayenne pepper.
  • For a vegetarian version, substitute the ground pork with plant-based protein or beans.
