Ingredients

Scale

Roasted Poblano Cheese Mixture

  • 4 poblano peppers
  • 16 oz cream cheese, softened
  • 1.5 cups shredded cheddar cheese
  • 1/4 cup diced chives
  • 1 Tbsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper

Burgers

  • 6 pre-formed beef burger patties (or 2 lbs ground beef divided into 6 patties)
  • Burger seasoning of choice

Buns

  • 6 brioche buns, toasted

Instructions

Prepare Poblano Mixture

  1. Roast the poblano peppers over an open flame or under the broiler until charred all over.
  2. Place roasted peppers in a bowl and cover to steam for 10 minutes. Peel off the skins, remove seeds, and chop finely.
  3. In a large bowl, mix cream cheese, cheddar, chives, garlic powder, salt, and pepper until smooth.
  4. Fold in chopped roasted poblanos until evenly distributed. Set aside.

Cook Burgers

  1. Season the beef patties generously with your favorite burger seasoning.
  2. Grill or cook patties on a skillet over medium-high heat until desired doneness, about 4-5 minutes per side for medium.
  3. In the last minute of cooking, top each patty with a generous spoonful of the poblano cheese mixture and cover to melt slightly.

Assemble Burgers

  1. Toast brioche buns lightly on the grill or in a skillet.
  2. Place each cheesy poblano-topped patty on a toasted bun and serve immediately.
  3. Add lettuce, tomato, or bacon if desired for extra flavor and texture.

Notes

  • Roasting the poblanos enhances their flavor and makes them easier to peel.
  • Use gloves when handling roasted peppers if you’re sensitive to spice.
  • Make the poblano cheese filling a day ahead for even more flavor.
  • Try adding crispy bacon or caramelized onions for extra indulgence.
