Shells & Topping
- 6 large cannoli shells

Instructions
Make the Filling
- In a large bowl, combine drained ricotta cheese, pistachio cream, mascarpone, powdered sugar, pistachio extract, lemon zest, and salt. Mix until fully smooth and creamy.
- If using, add green food coloring one drop at a time, mixing between additions, until desired pistachio hue is reached.
Assemble the Cannoli
- Spoon or pipe the pistachio filling into both ends of each cannoli shell just before serving.
- Dip each end into chopped pistachios for garnish.
- Serve immediately for the perfect crisp and creamy texture.

- Drain ricotta overnight through a cheesecloth-lined sieve for the smoothest filling.
