Description

This vibrant and refreshing pineapple mango salsa is a perfect balance of sweet and tangy, with a hint of spice from jalapeno, making it an ideal dip for tortilla chips or a topping for grilled meats.


Ingredients

  • 2 cups pineapple, diced
  • 1 ½ cups mango, diced
  • ½ cup red bell pepper, finely diced
  • ⅓ cup red onion, finely diced
  • ⅓ cup tomatoes, diced (Roma, cherry, grape, etc.)
  • ¼ cup cilantro, minced
  • 1 jalapeno, seeded and minced
  • 2 teaspoons lime zest
  • 2 tablespoons lime juice
  • 1 tablespoon honey

Instructions

  1. Combine pineapple, mango, red bell pepper, red onion, tomato, cilantro, jalapeno, and lime zest in a large bowl and toss gently to combine. Set aside.
  2. In a small bowl, whisk together the lime juice and honey until combined.
  3. Drizzle the lime juice and honey mixture over the salsa and gently fold or toss together until evenly distributed.
  4. Cover the salsa tightly with plastic wrap and refrigerate until ready to serve.
  5. Serve chilled with tortilla chips.

Notes

  • Makes about 4 cups of salsa.
  • This salsa pairs well with grilled chicken, fish, or pork, as well as chips.
  • For extra heat, leave some seeds in the jalapeno or add an extra one.
