Ingredients

Scale
  1. For the Cake:

    • 2 1/2 cups all-purpose flour: For structure and texture.
    • 2 cups granulated sugar: Adds sweetness.
    • 1 tsp baking powder: Helps the cake rise.
    • 1 tsp baking soda: Ensures a soft texture.
    • 1/2 tsp salt: Enhances flavors.
    • 1 cup unsalted butter (softened): For richness and moisture.
    • 1/2 cup pineapple juice: Adds tropical flavor.
    • 1/2 cup buttermilk: Keeps the cake tender.
    • 4 large eggs: Provides structure and richness.
    • 1 tsp vanilla extract: Adds warmth and depth of flavor.

    For the Glaze:

    • 1 1/2 cups powdered sugar: For a smooth, sweet glaze.
    • 1/4 cup pineapple juice: For a tangy kick.
    • 1 tsp vanilla extract: Complements the pineapple flavor.

Instructions

Make the Cake:

  1. Preheat & Prep: Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or round cake pans.
  2. Mix Wet Ingredients: In a large bowl, beat the softened butter and sugar until creamy. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Blend Together: Gradually mix the dry ingredients into the wet mixture, alternating with pineapple juice and buttermilk. Stir until the batter is smooth.
  5. Bake: Pour the batter into the prepared pan and bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Make the Glaze:

  1. In a medium bowl, whisk together powdered sugar, pineapple juice, and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled cake, letting it drip down the sides.

Notes

  • For extra flavor, add a pinch of cinnamon or nutmeg to the batter.
  • Use fresh pineapple juice for a brighter flavor.
  • The cake stays moist for 3–4 days when stored in an airtight container.
