- 3 cups of diced fresh pineapple
- 1 cup of thinly sliced jalapeño peppers
- 1 cup of apple cider vinegar
- 2 cups of granulated sugar
- 2 tablespoons of lemon juice
- 1 teaspoon of mustard seeds
- 1/2 teaspoon of turmeric powder
- 1 tablespoon of grated ginger
- 2 cloves of finely chopped garlic
Instructions
- In a large saucepan, combine apple cider vinegar, granulated sugar, lemon juice, mustard seeds, turmeric powder, grated ginger, and chopped garlic. Bring to a boil, then reduce heat and let simmer until the sugar is fully dissolved.
- Add the diced pineapple and sliced jalapeños to the saucepan. Simmer over medium heat for about 20 minutes, or until the pineapple softens and the liquid thickens into a syrupy consistency.
- While the mixture is simmering, sterilize your jars and lids by submerging them in boiling water for at least 5 minutes.
- Carefully spoon the pineapple mixture into the sterilized jars, leaving some space at the top. Wipe the rims clean and place the lids on.
- Process the jars in a hot water bath for about 10 minutes to seal.
- Allow the jars to cool completely before storing them in a cool, dark place. Ensure the jars are sealed before storing.
Notes
- You can adjust the spice level by adding more or fewer jalapeños.
- For best results, let the jars sit for a few days to allow the flavors to fully develop.
