- 1 pound boneless, skinless chicken breasts, thinly sliced

- 1/2 onion, chopped
- 1 can (15 oz) pineapple chunks, drained
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup rice vinegar
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups cooked rice

Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on both sides. Remove from skillet and set aside.

Sauté the Onion: In the same skillet, add chopped onion and cook until softened, about 3-4 minutes.

Add Pineapple and Sauce: Stir in the drained pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using). Let it simmer for 2-3 minutes.

Combine the Chicken: Return the cooked chicken to the skillet and toss it to coat with the sauce and pineapple mixture. Let it simmer for an additional 5 minutes, until everything is heated through.
