Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
  2. In another bowl, mix eggs, ricotta, vanilla extract, and milk until smooth.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  4. Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Drop small spoonfuls of batter into the hot oil, working in batches to avoid overcrowding.
  5. Fry for about 3–4 minutes, turning occasionally, until golden brown and puffed.
  6. Use a slotted spoon to remove zeppole and drain on paper towels.
  7. Dust with powdered sugar and serve warm.
