Instructions
- In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
- In another bowl, mix eggs, ricotta, vanilla extract, and milk until smooth.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Drop small spoonfuls of batter into the hot oil, working in batches to avoid overcrowding.
- Fry for about 3–4 minutes, turning occasionally, until golden brown and puffed.
- Use a slotted spoon to remove zeppole and drain on paper towels.
- Dust with powdered sugar and serve warm.
