  • 3/4 cup milk (any type)

  • 2 tsp butter

To Serve

  • Whipped cream

Instructions

Prepare the Batter

  1. In a bowl, whisk together flour, baking powder, sugar, and salt.
  2. In a separate bowl, beat together the egg, milk, and vanilla extract (if using).
  3. Pour wet ingredients into the dry and stir gently until just combined—do not overmix.

Cook the Pikelets

  1. Heat a non-stick skillet over medium heat and melt 1 tsp butter.
  2. Spoon small amounts of batter into the skillet to form round pikelets.
  3. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with remaining butter and batter.
