- 1 tablespoon olive oil
- Juice of 1 lemon
- 1 teaspoon sweet paprika
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cayenne powder
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground ginger
- 1/2 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Instructions
- In a large bowl, combine olive oil, lemon juice, sweet paprika, smoked paprika, cayenne, oregano, cardamom, ginger, onion powder, salt, and pepper.
- Add chicken drumsticks and toss to coat evenly.
- Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
- Preheat oven to 400°F (200°C) or preheat grill to medium-high heat.
- Place drumsticks on a baking sheet or grill.
- Bake for 35–40 minutes or grill for 25–30 minutes, turning occasionally, until chicken is cooked through and skin is crispy.
- Serve hot with extra lemon wedges if desired.
