Description

Juicy and flavorful Peri Peri chicken drumsticks marinated in a zesty blend of spices and lemon, then baked or grilled to crispy perfection.


Ingredients

  • 4 large chicken drumsticks
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. In a large bowl, combine olive oil, lemon juice, sweet paprika, smoked paprika, cayenne, oregano, cardamom, ginger, onion powder, salt, and pepper.
  2. Add chicken drumsticks and toss to coat evenly.
  3. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
  4. Preheat oven to 400°F (200°C) or preheat grill to medium-high heat.
  5. Place drumsticks on a baking sheet or grill.
  6. Bake for 35–40 minutes or grill for 25–30 minutes, turning occasionally, until chicken is cooked through and skin is crispy.
  7. Serve hot with extra lemon wedges if desired.

  • Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
