- 2 cups shredded mozzarella cheese
- 3 oz soft cream cheese
- ¾ cup coconut flour
- ½ teaspoon Italian herbs
- ¼ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon xanthan gum
- 1 tablespoon baking powder
- 2 eggs
- Salt to taste
- ½ cup marinara sauce
- 8 oz mozzarella cheese, for filling
- 2 oz sliced pepperoni
Instructions
- Preheat oven to 400°F (200°C).
- In a microwave-safe bowl, combine 2 cups shredded mozzarella and cream cheese. Microwave for 2 minutes, stirring halfway, until melted and smooth.
- Add coconut flour, Italian herbs, onion powder, garlic powder, xanthan gum, baking powder, eggs, and salt to the cheese mixture. Mix by hand until dough forms.
- Roll the dough between two sheets of parchment into an 8×16-inch rectangle.
- Spread half the marinara over the dough. Sprinkle with mozzarella and layer with pepperoni.
- Roll the dough into a log. Cut in half, then slice into 10 equal pinwheels.
- Lightly spray a pie dish with oil. Place pinwheels cut side down into the dish. Top with remaining marinara.
- Bake for 25–30 minutes, until browned and cooked through.
- Let cool in the pan for 10 minutes before serving.
Notes
- Use parchment paper when rolling to prevent sticking.
- For a crispier texture, bake on a sheet pan instead of a pie dish.
- You can swap coconut flour for almond flour, but adjust the amount and texture accordingly.
- Store leftovers in the fridge and reheat in the oven or air fryer.
