For the Dough:

  • 260 g (2 cups) pasta flour or bread flour
  • 100 g (scant ½ cup) Greek yogurt
  • 120 ml (½ cup) tepid water
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 egg, lightly beaten (for brushing)

Cheese Filling:

  • 300 g (10½ oz) grated cheese (mozzarella and cheddar blend)
  • 1 tsp mixed herbs
  • 1 tsp garlic powder
  • Drizzle of olive oil

Optional Toppings:

  • Pancetta, bacon, or ham
  • Sliced peppers
  • Cherry tomatoes

Instructions

  1. In a small bowl, mix active dry yeast, sugar, and tepid water. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, combine flour and salt. Add Greek yogurt, olive oil, and the foamy yeast mixture.
  3. Knead until a soft, smooth dough forms (about 8–10 minutes). Cover and let rise in a warm spot until doubled, about 1 hour.
  4. Preheat oven to 220°C (425°F). Line a baking sheet with parchment paper.
  5. Divide dough into equal portions (2–4, depending on size preference). Roll each into an oval shape on a floured surface.
  6. Mix grated cheese, mixed herbs, garlic powder, and a drizzle of olive oil in a bowl.
  7. Spoon cheese mixture down the center of each oval, leaving the edges clean. Add optional toppings if using.
  8. Fold the long edges of the dough over the filling and pinch both ends to create a boat shape.
  9. Transfer to the baking sheet and brush the exposed dough edges with beaten egg.
  10. Bake for 15–20 minutes or until the crust is golden and the cheese is melted and bubbly.
  11. Serve warm, straight from the oven—pure comfort food!

Notes

  • Use bread flour for a chewier crust, or pasta flour for a softer bite.
  • Greek yogurt helps make the dough extra tender—don’t skip it!
