- 2 tbsp olive oil

- 1 egg, lightly beaten (for brushing)
Cheese Filling:
- 300 g (10½ oz) grated cheese (mozzarella and cheddar blend)
- 1 tsp mixed herbs
- 1 tsp garlic powder
- Drizzle of olive oil
Optional Toppings:
- Pancetta, bacon, or ham
- Sliced peppers
- Cherry tomatoes
Instructions
- In a small bowl, mix active dry yeast, sugar, and tepid water. Let sit for 5–10 minutes until foamy.
- In a large bowl, combine flour and salt. Add Greek yogurt, olive oil, and the foamy yeast mixture.
- Knead until a soft, smooth dough forms (about 8–10 minutes). Cover and let rise in a warm spot until doubled, about 1 hour.
- Preheat oven to 220°C (425°F). Line a baking sheet with parchment paper.
- Divide dough into equal portions (2–4, depending on size preference). Roll each into an oval shape on a floured surface.
- Mix grated cheese, mixed herbs, garlic powder, and a drizzle of olive oil in a bowl.
- Spoon cheese mixture down the center of each oval, leaving the edges clean. Add optional toppings if using.
- Fold the long edges of the dough over the filling and pinch both ends to create a boat shape.
- Transfer to the baking sheet and brush the exposed dough edges with beaten egg.
- Bake for 15–20 minutes or until the crust is golden and the cheese is melted and bubbly.
- Serve warm, straight from the oven—pure comfort food!

- Use bread flour for a chewier crust, or pasta flour for a softer bite.
