Description

These buttery, melt-in-your-mouth Pecan Shortbread Bars are the perfect treat for any occasion. Packed with toasted pecans, this dessert is a sweet combination of crunchy and soft. The best part? They’re super easy to make and incredibly satisfying


Ingredients

  1. 1 ½ cups (180g) chopped pecans

  2. 1 cup (227g) unsalted butter, softened

  3. ⅔ cup (134g) granulated sugar

  4. 1 teaspoon vanilla extract

  5. ½ teaspoon salt

  6. 1 tablespoon (8g) cornstarch

  7. 2 cups (248g) all-purpose flour


Instructions

  • Preheat the oven to 350°F (175°C). Line a 9×13-inch pan with foil and spray with nonstick cooking spray.

  • Toast the pecans in a pan over medium-low heat, stirring often, for 3-5 minutes. Let them cool.

  • Cream the butter and sugar together in a large bowl until smooth. Mix in the vanilla extract, salt, and cornstarch.

  • Gradually add the flour, mixing until the dough begins to come together. Stir in the toasted pecans.

  • Press the dough evenly into the prepared pan.

  • Bake for 25-30 minutes for a soft texture or 35 minutes for a crunchy texture.

  • Allow the bars to cool completely before cutting into squares.

 

  • Store in an airtight container for up to 4 days or freeze for up to 3 months.


Notes

  • The baking time determines the texture. For softer bars, bake for the shorter time (25-30 minutes), and for a crunchier version, go the full 35 minutes.

  • You can store any leftover bars in the fridge for a longer shelf life, or freeze them to enjoy later.

 

  • You can also add chocolate chips or a drizzle of chocolate over the bars for a richer treat.
