- Pearl couscous (or Israeli couscous)
- Carrots, zucchini, bell peppers, spinach (chopped)
- Onion and garlic (chopped)
- Canned tomatoes (diced)
- White beans (optional)
- Vegetable broth
- Olive oil
- Herbs (thyme, basil, parsley)
- Salt and pepper
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onion and garlic until fragrant and translucent.
- Add chopped carrots, zucchini, and bell peppers. Cook for 5–7 minutes until slightly tender.
- Stir in diced tomatoes, vegetable broth, thyme, basil, and parsley. Bring the mixture to a gentle simmer.
- Add pearl couscous and optional white beans. Simmer uncovered for 10–12 minutes or until couscous is tender.
- Stir in fresh spinach and cook for another 2–3 minutes until wilted.
- Season with salt and pepper to taste. Serve hot with crusty bread if desired.
Notes
- Feel free to substitute kale for spinach for a heartier green.
- Use gluten-free couscous or rice if needed for dietary restrictions.
- To add a bit of heat, toss in a pinch of red pepper flakes.
- This soup freezes well—just leave out the spinach and add it fresh when reheating.
