  • Pearl couscous (or Israeli couscous)
  • Carrots, zucchini, bell peppers, spinach (chopped)
  • Onion and garlic (chopped)
  • Canned tomatoes (diced)
  • White beans (optional)
  • Vegetable broth
  • Olive oil
  • Herbs (thyme, basil, parsley)
  • Salt and pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until fragrant and translucent.
  2. Add chopped carrots, zucchini, and bell peppers. Cook for 5–7 minutes until slightly tender.
  3. Stir in diced tomatoes, vegetable broth, thyme, basil, and parsley. Bring the mixture to a gentle simmer.
  4. Add pearl couscous and optional white beans. Simmer uncovered for 10–12 minutes or until couscous is tender.
  5. Stir in fresh spinach and cook for another 2–3 minutes until wilted.
  6. Season with salt and pepper to taste. Serve hot with crusty bread if desired.

Notes

  • Feel free to substitute kale for spinach for a heartier green.
