- 2 eggs, sunny-side up

Instructions
- Heat olive oil in a skillet over medium heat. Add onions and cook slowly, stirring often, until deeply caramelized, about 15–20 minutes. Set aside.
- In the same skillet, cook eggs sunny-side up to your liking. Set aside.
- Spread fig preserves on the cut sides of each toasted bagel half.
- Layer cheese, caramelized onions, apple slices, pear slices, and arugula on the bottom halves of the bagels.
- Top each with a cooked sunny-side-up egg, then place the other bagel half on top.
- If desired, press the whole sandwich briefly in a pan or sandwich press to melt the cheese. Serve warm.
