  • 2 eggs, sunny-side up
  • 2 everything bagels, toasted (gluten-free if needed)

  • ½ ripe Bosc pear, cored and thinly sliced
  • 4 tablespoons fig preserves

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onions and cook slowly, stirring often, until deeply caramelized, about 15–20 minutes. Set aside.
  2. In the same skillet, cook eggs sunny-side up to your liking. Set aside.
  3. Spread fig preserves on the cut sides of each toasted bagel half.
  4. Layer cheese, caramelized onions, apple slices, pear slices, and arugula on the bottom halves of the bagels.
  5. Top each with a cooked sunny-side-up egg, then place the other bagel half on top.
  6. If desired, press the whole sandwich briefly in a pan or sandwich press to melt the cheese. Serve warm.
