Instructions
- Preheat and Prepare Pan
Preheat your oven to 350°F (175°C). Grease and flour or spray an 11×13-inch baking pan. - Make the Cake Batter
In a large bowl, whisk together the flour, sugar, baking soda, and salt.
Combine the water and butter in a large saucepan and heat until the butter melts. Stir in the peanut butter until smooth. Remove from heat and let it cool for 10-15 minutes, stirring occasionally. - Combine Wet and Dry Ingredients
Stir the dry mixture into the peanut butter mixture just until combined. Add the eggs, buttermilk, and vanilla, stirring gently to combine. - Bake the Cake
Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted into the center comes out clean. Remove the cake from the oven and set it on a cooling rack to cool completely. - Make the Peanut Butter Frosting
In a large mixing bowl, cream together the butter, cream cheese, and peanut butter until smooth and creamy. Gradually add the powdered sugar in ½ cup increments, followed by the vanilla. If the frosting is too thick, add milk or heavy cream, one tablespoon at a time, until the desired consistency is reached. - Frost the Cake
Once the cake has fully cooled, spread the peanut butter frosting generously over the top. Slice and serve.
Notes
- Make sure the cake is completely cooled before frosting it to avoid melting the frosting.
- You can add a little more or less peanut butter to the frosting depending on how peanut-buttery you like it.
- If you prefer a thicker frosting, reduce the amount of milk or cream you add.
