Description

These Peanut Butter Brownie Bombs are a rich, indulgent treat with layers of fudgy brownie, creamy peanut butter, and a chocolate coating. Finished with a drizzle of peanut butter royal icing, they’re the ultimate sweet indulgence! Perfect for satisfying your sweet tooth or as a homemade gift.

Ingredients

Scale
  1. For the Brownie Bombs:

    • 1 box fudge brownie mix (plus the ingredients listed on the box to make it)

    • 1 cup creamy peanut butter

    • ¾ cup powdered sugar (divided)

    • ½ teaspoon vanilla extract

    • 1 pinch salt

    • 24 ounces semi-sweet chocolate chips

  2. For the Peanut Butter Royal Icing:

    1. 1 cup powdered sugar

    2. 1 tablespoon water

    3. 2 teaspoons creamy peanut butter

    4. 1 teaspoon light corn syrup

    5. ¼ teaspoon vanilla extract

Instructions

  • Prepare the Brownies:
Follow the instructions on the brownie mix box to make the brownies. Once baked, let the brownies cool completely.

  • Make the Peanut Butter Filling:
In a bowl, mix the creamy peanut butter, ½ cup powdered sugar, vanilla extract, and a pinch of salt until smooth and well-combined.

  • Form the Brownie Balls:
Scoop small portions of the cooled brownie and flatten them in your hands. Place a small spoonful of the peanut butter mixture in the center of each flattened brownie piece. Fold the edges of the brownie over the peanut butter and roll it into a ball shape.

  • Freeze the Brownie Balls:
Arrange the brownie balls on a baking sheet lined with parchment paper. Freeze the brownie balls for about 30 minutes to firm them up.

  • Melt the Chocolate:
In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring in between, until smooth.

  • Dip the Brownie Bombs:
Dip each frozen brownie ball into the melted chocolate, making sure it is completely coated. Place the coated balls back on the parchment paper and allow the chocolate to set.

  • Make the Peanut Butter Royal Icing:
In a small bowl, combine the powdered sugar, water, peanut butter, corn syrup, and vanilla extract. Stir until smooth and creamy.

  • Decorate with Icing:
Drizzle the peanut butter royal icing over the chocolate-covered brownie bombs.

  • Serve:
Let the icing set before serving. Enjoy the delicious Peanut Butter Brownie Bombs

Notes

  • You can use any brownie mix of your choice, or make brownies from scratch if preferred.

  • Freezing the brownie balls before dipping in chocolate helps them maintain their shape and ensures the chocolate coating sticks better.

  • If you don’t have semi-sweet chocolate chips, you can substitute with milk chocolate or dark chocolate depending on your preference.

  • Store these brownie bombs in an airtight container at room temperature for up to a week or in the fridge for longer shelf life.
