Description
Peanut brittle is a crunchy, sweet candy made with peanuts, sugar, corn syrup, and butter. It’s a delicious treat that’s perfect for holidays or anytime you’re craving something sweet and salty.
Ingredients

- 2 cups granulated sugar (400 grams)
- 1 cup light corn syrup (320 grams)
- ½ cup water (120 ml)
- 2 cups dry roasted and lightly salted peanuts (280 grams)
- ¼ cup unsalted butter, softened and cubed into small pieces (60 grams)
- 1 teaspoon baking soda
- 2 teaspoons pure vanilla extract
Instructions
- Line a cookie sheet with parchment paper and set aside.
- In a large saucepan, combine the granulated sugar, corn syrup, and water. Cook over medium-low heat, stirring occasionally, until the mixture reaches 250°F (121°C).
- Once the sugar mixture reaches the right temperature, add the peanuts and stir. Continue cooking, stirring constantly, until the temperature reaches 300°F (150°C). (Use a candy or instant-read thermometer to check the temperature.)
- Turn off the heat and remove the saucepan from the stove. Quickly add the butter, baking soda, and vanilla extract. Stir carefully as the mixture will release steam. Continue stirring until the butter is fully melted and mixed in.
- Carefully pour the hot candy mixture over the prepared cookie sheet. Use a spoon or rubber spatula to spread the mixture into an even layer. You can also use two forks to help spread it into a thinner layer if necessary.
- Allow the peanut brittle to cool completely before breaking it into pieces.
Notes
- Be careful when handling the hot candy mixture as it can cause burns.
- If you don’t have a candy thermometer, you can use the cold water test: drop a small amount of the mixture into cold water, and if it forms a hard, brittle ball, it’s ready.
- This recipe can easily be doubled or halved depending on the amount you want to make.
