This Mediterranean-inspired pasta is packed with vibrant flavors! Juicy cherry tomatoes, creamy feta, and fresh spinach come together for a quick and easy meatless meal. Perfect as a vegetarian main or a side with grilled meats, salmon, or shrimp.
10 oz farfalle pasta (or any pasta of choice)
1 tbsp olive oil (plus more if needed)
8 oz grape tomatoes (red and yellow, halved)
5 cloves garlic, minced
¼ tsp salt
¼ tsp paprika
½ tsp Italian seasoning
5 oz fresh spinach, chopped
6 oz crumbled feta cheese
3 tbsp freshly squeezed lemon juice
Cook Pasta: Bring a large pot of water to a boil. Add pasta and cook according to package instructions. Drain and set aside.
Cook Veggies: Heat olive oil in a large skillet over medium heat. Add tomatoes, garlic, salt, paprika, and Italian seasoning. Cook for 2 minutes until tomatoes soften and release juices.
Combine & Serve: Stir in chopped spinach and cook until wilted. Mix in feta cheese. Add cooked pasta and lemon juice, stirring to combine. Reheat for 1 minute and add extra olive oil if needed.
You can use any type of pasta such as penne, spaghetti, or fusilli depending on your preference.
For added flavor, consider drizzling some balsamic glaze on top before serving.
