Pasta with Feta and Cherry Tomatoes

This Mediterranean-inspired pasta is packed with vibrant flavors! Juicy cherry tomatoes, creamy feta, and fresh spinach come together for a quick and easy meatless meal. Perfect as a vegetarian main or a side with grilled meats, salmon, or shrimp.

Ingredients

  1. 10 oz farfalle pasta (or any pasta of choice)

  2. 1 tbsp olive oil (plus more if needed)

  3. 8 oz grape tomatoes (red and yellow, halved)

  4. 5 cloves garlic, minced

  5. ¼ tsp salt

  6. ¼ tsp paprika

  7. ½ tsp Italian seasoning

  8. 5 oz fresh spinach, chopped

  9. 6 oz crumbled feta cheese

  10. 3 tbsp freshly squeezed lemon juice

Instructions

  • Cook Pasta: Bring a large pot of water to a boil. Add pasta and cook according to package instructions. Drain and set aside.

  • Cook Veggies: Heat olive oil in a large skillet over medium heat. Add tomatoes, garlic, salt, paprika, and Italian seasoning. Cook for 2 minutes until tomatoes soften and release juices.

 

  • Combine & Serve: Stir in chopped spinach and cook until wilted. Mix in feta cheese. Add cooked pasta and lemon juice, stirring to combine. Reheat for 1 minute and add extra olive oil if needed.

Notes

  • You can use any type of pasta such as penne, spaghetti, or fusilli depending on your preference.

 

  • For added flavor, consider drizzling some balsamic glaze on top before serving.
