Description

  • ¾ cup sugar
  • ⅓ cup cornstarch
  • 1 pinch salt
  • 1 cup orange juice
  • ½ cup lemon juice
  • ¼ cup water
  • 4 eggs, separated
  • 4 tablespoons butter or margarine, cut into pieces
  • 2 teaspoons grated orange zest
  • ½ cup diced orange segments
  • ½ cup white sugar
  • ¼ teaspoon cream of tartar

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add orange juice, lemon juice, and water, stirring to combine.
  3. Cook the mixture over medium heat, stirring constantly, until it thickens and begins to boil.
  4. In a separate bowl, lightly beat the egg yolks. Slowly whisk a small amount of the hot mixture into the yolks to temper them, then whisk the yolks back into the saucepan.
  5. Continue cooking and stirring for 2–3 minutes, then remove from heat. Stir in butter, orange zest, and diced orange segments.
  6. Pour the filling into the unbaked pie crust.
  7. In a clean bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add white sugar and cream of tartar, continuing to beat until stiff peaks form.
  8. Spread the meringue over the pie filling, making sure it touches the crust all around the edges to prevent shrinking.
  9. Bake in the preheated oven for 10–12 minutes, or until the meringue is golden brown.
  10. Allow the pie to cool before serving. Enjoy!
