- 1 (9 inch) unbaked pie crust
- ¾ cup sugar
- ⅓ cup cornstarch
- 1 pinch salt
- 1 cup orange juice
- ½ cup lemon juice
- ¼ cup water
- 4 eggs, separated
- 4 tablespoons butter or margarine, cut into pieces
- 2 teaspoons grated orange zest
- ½ cup diced orange segments
- ½ cup white sugar
- ¼ teaspoon cream of tartar
Instructions
- Preheat the oven to 375°F (190°C).
- In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add orange juice, lemon juice, and water, stirring to combine.
- Cook the mixture over medium heat, stirring constantly, until it thickens and begins to boil.
- In a separate bowl, lightly beat the egg yolks. Slowly whisk a small amount of the hot mixture into the yolks to temper them, then whisk the yolks back into the saucepan.
- Continue cooking and stirring for 2–3 minutes, then remove from heat. Stir in butter, orange zest, and diced orange segments.
- Pour the filling into the unbaked pie crust.
- In a clean bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add white sugar and cream of tartar, continuing to beat until stiff peaks form.
- Spread the meringue over the pie filling, making sure it touches the crust all around the edges to prevent shrinking.
- Bake in the preheated oven for 10–12 minutes, or until the meringue is golden brown.
- Allow the pie to cool before serving. Enjoy!
