Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup icing sugar
  • 3 tbsp cornflour (cornstarch)
  • Finely grated orange peel (from 1 medium orange)
  • 1 tsp cinnamon powder
  • 1/4 tsp salt

Instructions

  • In a large bowl, add butter, icing sugar, and finely grated orange peel, then mix until light and pale.
  • Sift in the flour, cornflour, cinnamon, and salt. Mix until a dough is formed.
  • Use your hands to mix the dough. It may take a little time, but it will come together.
  • Lightly flour your work surface, then roll the dough out and flatten it with a rolling pin.
  • Use a fork to scrape the dough on top. Let the dough chill in the refrigerator for 30 minutes.
  • Once the dough has chilled, take it out and use the fork to scrape the dough again. Use a cookie cutter to cut out the dough.
  • Place the dough pieces on a lined baking tray.
  • Bake in a preheated oven at 180°C (350°F) for 15 minutes, or until slightly golden brown.

Notes

  • The dough may appear a bit crumbly at first, but it will come together as you mix with your hands.
  • Chilling the dough is an important step to help the cookies hold their shape during baking.
  • Store the cookies in an airtight container to keep them fresh.
