Description

A hearty and flavorful Supreme Pizza Tortellini Bake that combines tender tortellini, spicy chorizo, and all your favorite pizza toppings baked in rich marinara sauce and gooey mozzarella cheese.


Ingredients

  • 1 lb chorizo
  • 2 (24 oz) jars store-bought marinara (or homemade)
  • 14.5 oz canned diced tomatoes
  • 20 oz tortellini (fresh or refrigerated)
  • 3 oz sliced pepperoni
  • 2 oz sliced black olives
  • 1 green bell pepper, sliced
  • 1/2 medium red onion, thinly sliced
  • 16 oz shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook chorizo for 5–7 minutes until browned. Drain excess fat.
  3. Stir in marinara sauce and canned tomatoes. Simmer for 3 minutes to reduce some liquid.
  4. Lightly spread a thin layer of sauce in the bottom of a casserole dish.
  5. Toss tortellini into the remaining sauce mixture and stir to coat.
  6. Add half of the sauced tortellini to the dish. Layer with half the pepperoni, olives, bell pepper, red onion, and mozzarella.
  7. Repeat with remaining tortellini and toppings.
  8. Bake uncovered for 25 minutes. Broil for the last 5 minutes for a golden top.
  9. Remove from oven and serve hot.

Notes

  • Use spicy or mild chorizo depending on heat preference.
  • Refrigerate leftovers and reheat in the oven for best texture.
  • Feel free to substitute vegetables or add mushrooms or jalapeños for extra flavor.
