Description
A hearty and flavorful Supreme Pizza Tortellini Bake that combines tender tortellini, spicy chorizo, and all your favorite pizza toppings baked in rich marinara sauce and gooey mozzarella cheese.

- 1 lb chorizo
- 2 (24 oz) jars store-bought marinara (or homemade)
- 14.5 oz canned diced tomatoes
- 20 oz tortellini (fresh or refrigerated)
- 3 oz sliced pepperoni
- 2 oz sliced black olives
- 1 green bell pepper, sliced
- 1/2 medium red onion, thinly sliced
- 16 oz shredded mozzarella cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet over medium heat, cook chorizo for 5–7 minutes until browned. Drain excess fat.
- Stir in marinara sauce and canned tomatoes. Simmer for 3 minutes to reduce some liquid.
- Lightly spread a thin layer of sauce in the bottom of a casserole dish.
- Toss tortellini into the remaining sauce mixture and stir to coat.
- Add half of the sauced tortellini to the dish. Layer with half the pepperoni, olives, bell pepper, red onion, and mozzarella.
- Repeat with remaining tortellini and toppings.
- Bake uncovered for 25 minutes. Broil for the last 5 minutes for a golden top.
- Remove from oven and serve hot.
Notes
- Use spicy or mild chorizo depending on heat preference.
- Refrigerate leftovers and reheat in the oven for best texture.
- Feel free to substitute vegetables or add mushrooms or jalapeños for extra flavor.
