Description

  • 1 lb chicken breast, diced
  • 1 lb smoked sausage, sliced
  • 12 oz penne or rotini pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Chopped parsley, for garnish (optional)

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add diced chicken and sliced smoked sausage. Cook for 5–7 minutes, stirring occasionally, until the chicken is browned.
  2. Stir in diced onion and minced garlic. Cook for 2–3 minutes until softened and fragrant.
  3. Pour in chicken broth and heavy cream. Stir in ranch seasoning and uncooked pasta. Bring to a boil, then reduce heat to low.
  4. Cover and simmer for 10–12 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.
  5. Remove from heat. Stir in shredded cheddar until melted and creamy. Season with salt and pepper to taste.
  6. Top with chopped parsley if desired. Serve hot and enjoy creamy pasta with smoky sausage and tender chicken in every bite.
