Description

A quick and flavorful one-pot dish featuring garlicky shrimp, tender broccoli, and a hint of lemon.


Ingredients

  • 3 tablespoons extra-virgin olive oil, divided
  • 6 medium cloves garlic, sliced, divided
  • 4 cups small broccoli florets
  • ½ cup diced red bell pepper
  • ½ teaspoon salt, divided
  • ½ teaspoon ground pepper, divided
  • 1 pound peeled and deveined raw shrimp (2130 count)
  • 2 teaspoons lemon juice, plus more to taste

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  2. Add 3 cloves of garlic and sauté until fragrant, about 1 minute.
  3. Add broccoli and bell pepper to the skillet, season with ¼ teaspoon salt and ¼ teaspoon pepper, and cook for 4–5 minutes, stirring occasionally, until broccoli is tender. Remove from skillet and set aside.
  4. In the same skillet, heat another tablespoon of olive oil over medium-high heat. Add the remaining garlic and sauté until fragrant.
  5. Add shrimp to the skillet and season with the remaining ¼ teaspoon salt and ¼ teaspoon pepper. Cook for 2–3 minutes on each side until shrimp are pink and opaque.
  6. Return the broccoli and bell pepper to the skillet, tossing to combine.
  7. Stir in lemon juice, adding more to taste. Serve immediately.

Notes

  • This dish can be served with rice or pasta for a complete meal.
  • Feel free to add more vegetables like carrots or snap peas for extra color and nutrients.
  • If you prefer a spicier kick, add red pepper flakes when sautéing the garlic.
