1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

2 medium zucchinis, diced

1 bell pepper, diced

1 can (14.5 oz) diced tomatoes, drained

1 can (8 oz) tomato sauce

1 tbsp taco seasoning

½ tsp salt

½ tsp black pepper

½ cup shredded cheddar cheese

¼ cup chopped fresh cilantro (optional)

1 avocado, sliced (optional)
Instructions

In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease if needed.

Add the diced onion and garlic, cooking for 2-3 minutes until fragrant.

Stir in the diced zucchini and bell pepper, cooking for another 5 minutes until slightly tender.

Add the diced tomatoes, tomato sauce, taco seasoning, salt, and black pepper. Stir well to combine.

Simmer for 5-7 minutes until the vegetables are fully cooked and the flavors meld.
