Description

A quick and healthy one-pan meal that’s perfect for busy weeknights! This Taco Zucchini Skillet combines seasoned ground beef, tender veggies, and melted cheddar cheese for a flavorful dinner. Add a touch of fresh cilantro and creamy avocado for the ultimate taco-inspired meal.


Ingredients

  1. 1 lb ground beef

  2. 1 small onion, diced

  3. 2 cloves garlic, minced

  4. 2 medium zucchinis, diced

  5. 1 bell pepper, diced

  6. 1 can (14.5 oz) diced tomatoes, drained

  7. 1 can (8 oz) tomato sauce

  8. 1 tbsp taco seasoning

  9. ½ tsp salt

  10. ½ tsp black pepper

  11. ½ cup shredded cheddar cheese

  12. ¼ cup chopped fresh cilantro (optional)

  13. 1 avocado, sliced (optional)


Instructions

  • In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease if needed.

  • Add the diced onion and garlic, cooking for 2-3 minutes until fragrant.

  • Stir in the diced zucchini and bell pepper, cooking for another 5 minutes until slightly tender.

  • Add the diced tomatoes, tomato sauce, taco seasoning, salt, and black pepper. Stir well to combine.

  • Simmer for 5-7 minutes until the vegetables are fully cooked and the flavors meld.

  • Sprinkle shredded cheddar cheese over the top, cover, and let it melt for about 2 minutes.

 

  • Garnish with fresh cilantro and sliced avocado if desired.


Notes

  • Feel free to swap out ground beef with ground turkey or chicken for a leaner option.

 

  • If you prefer spicier dishes, add some diced jalapeños or a pinch of cayenne pepper to the skillet.
