Description

This One-Pan Bold Honey BBQ Chicken Rice is the ultimate comfort meal with juicy, tender chicken pieces coated in a sweet and savory honey BBQ sauce, served over fluffy rice. It’s a simple, one-pan dish that’s perfect for weeknight dinners!

Ingredients

Scale
  1. 2 cups cooked rice
  2. 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
  3. 1 tablespoon olive oil
  4. 1/2 teaspoon salt
  5. 1/2 teaspoon black pepper
  6. 1/2 teaspoon garlic powder
  7. 1/2 teaspoon smoked paprika
  8. 1/2 cup barbecue sauce
  9. 2 tablespoons honey
  10. 1 tablespoon soy sauce
  11. 1 tablespoon apple cider vinegar
  12. 1/2 teaspoon red pepper flakes (optional)
  13. 2 green onions, chopped, for garnish

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt, pepper, garlic powder, and smoked paprika. Cook for 5-6 minutes until browned and fully cooked.
  • In a small bowl, whisk together the barbecue sauce, honey, soy sauce, apple cider vinegar, and red pepper flakes.
  • Pour the sauce over the cooked chicken, stirring to coat evenly. Let simmer for 2-3 minutes until the sauce thickens and caramelizes.
  • Add the cooked rice to the skillet, stirring to combine with the sauce and chicken. Let it heat through for another 2 minutes.

  • Garnish with chopped green onions and serve hot.

Notes

  • You can use brown rice for a healthier version.
  • Feel free to adjust the spice level by adding more or less red pepper flakes.
  • If you prefer a sweeter flavor, increase the amount of honey to taste.

  • You can use any BBQ sauce of your choice, whether homemade or store-bought.
