- 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 cup barbecue sauce
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon red pepper flakes (optional)
- 2 green onions, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt, pepper, garlic powder, and smoked paprika. Cook for 5-6 minutes until browned and fully cooked.
- In a small bowl, whisk together the barbecue sauce, honey, soy sauce, apple cider vinegar, and red pepper flakes.
- Pour the sauce over the cooked chicken, stirring to coat evenly. Let simmer for 2-3 minutes until the sauce thickens and caramelizes.
- Add the cooked rice to the skillet, stirring to combine with the sauce and chicken. Let it heat through for another 2 minutes.
- Garnish with chopped green onions and serve hot.
Notes
- You can use brown rice for a healthier version.
- Feel free to adjust the spice level by adding more or less red pepper flakes.
