These Olympic Village Chocolate Muffins are ultra-rich, moist, and loaded with chocolate chunks for the ultimate chocolate lover’s dream! With a hint of coffee to enhance the cocoa flavor and a decadent ganache topping, these muffins are perfect for dessert or a sweet treat any time.

Ingredients

  1. Chocolate Muffins:

    • 1¾ cup all-purpose flour
    • ½ cup cocoa powder
    • ½ cup light brown sugar
    • ¾ cup sugar
    • ¾ tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt
    • 1 tsp instant coffee powder
    • 1 large egg
    • ½ cup vegetable oil
    • ½ cup milk
    • ¾ cup yogurt or additional milk
    • 1 tsp vanilla extract
    • ½ cup dark chocolate chunks
    • ½ cup milk chocolate chunks

    Chocolate Ganache:

    1. 1 cup dark chocolate
    2. ¾ cup heavy cream

Instructions

Muffins:

  1. Preheat oven to 355℉ (180℃). Line a muffin pan with muffin liners.
  2. In a bowl, whisk together flour, cocoa powder, sugars, baking powder, baking soda, salt, and coffee powder. Sift to remove lumps.
  3. In another bowl, whisk together the egg, oil, milk, yogurt, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix).
  5. Fold in chocolate chunks using a spatula.
  6. Scoop the batter into the muffin liners, filling them to the top. Sprinkle extra chocolate chunks on top.
  7. Bake for 20 minutes or until a toothpick inserted comes out mostly clean. Let muffins cool.

Chocolate Ganache:

 

  1. Heat heavy cream until hot (but not boiling). Pour over dark chocolate.
  2. Let sit for 2-3 minutes, then stir until smooth.
  3. Drizzle ganache over muffins once they have cooled.

Notes

  • For extra richness, feel free to add a tablespoon of brewed coffee to enhance the coffee flavor.
  • These muffins can be stored in an airtight container for up to 3 days, but they are best enjoyed fresh.

 

  • If you prefer a less sweet muffin, you can reduce the sugar by ¼ cup.
