Chocolate Muffins:
- 1¾ cup all-purpose flour
- ½ cup cocoa powder
- ½ cup light brown sugar
- ¾ cup sugar
- ¾ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp instant coffee powder
- 1 large egg
- ½ cup vegetable oil
- ½ cup milk
- ¾ cup yogurt or additional milk
- 1 tsp vanilla extract
- ½ cup dark chocolate chunks
- ½ cup milk chocolate chunks
Chocolate Ganache:
- 1 cup dark chocolate
- ¾ cup heavy cream
Instructions
Muffins:
- Preheat oven to 355℉ (180℃). Line a muffin pan with muffin liners.
- In a bowl, whisk together flour, cocoa powder, sugars, baking powder, baking soda, salt, and coffee powder. Sift to remove lumps.
- In another bowl, whisk together the egg, oil, milk, yogurt, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix).
- Fold in chocolate chunks using a spatula.
- Scoop the batter into the muffin liners, filling them to the top. Sprinkle extra chocolate chunks on top.
- Bake for 20 minutes or until a toothpick inserted comes out mostly clean. Let muffins cool.
Chocolate Ganache:
- Heat heavy cream until hot (but not boiling). Pour over dark chocolate.
- Let sit for 2-3 minutes, then stir until smooth.
- Drizzle ganache over muffins once they have cooled.
Notes
- For extra richness, feel free to add a tablespoon of brewed coffee to enhance the coffee flavor.
- These muffins can be stored in an airtight container for up to 3 days, but they are best enjoyed fresh.
- If you prefer a less sweet muffin, you can reduce the sugar by ¼ cup.
