This Southern Cabbage Casserole is a classic comfort food with tender cabbage, sweet Vidalia onions, creamy chicken soup, and a crunchy, cheesy Ritz cracker topping. A deliciously hearty side dish or even a main course!

Ingredients

  1. Casserole:

    • 1 small head green cabbage, roughly chopped
    • 1 medium Vidalia onion, chopped
    • 8 tablespoons butter (1 stick)
    • Salt and pepper to taste
    • 1 (10-ounce) can condensed cream of chicken soup
    • 1/3 cup mayonnaise
  2. Topping:

    1. 4 tablespoons butter, melted
    2. 1 cup shredded sharp cheddar cheese
    3. 1 sleeve Ritz crackers, crushed

Instructions

  • Preheat and Prepare:
    Preheat oven to 350°F (175°C). Lightly grease a casserole dish and set aside.

  • Cook the Cabbage and Onion:
    Wash and roughly chop the cabbage. Melt the butter in a large nonstick pan. Add the cabbage and chopped onions, cooking for about 10 minutes, stirring frequently, until partially cooked down. Season with salt and pepper.

  • Assemble the Casserole:
    Transfer the cabbage and onion mixture to the prepared baking dish. In a small bowl, stir together the condensed cream of chicken soup and mayonnaise. Spread this mixture over the cabbage.

  • Prepare the Topping:
    In a separate bowl, stir together the melted butter, shredded cheddar cheese, and crushed Ritz crackers. Sprinkle this mixture over the top of the casserole.

  • Bake:
    Bake the casserole in the preheated oven for 30-35 minutes, or until the topping is golden brown and bubbly.

 

  • Serve and Enjoy:
    Once baked, remove from the oven and let it cool for a few minutes before serving. Enjoy this hearty Southern dish!

Notes

  • This casserole can be made ahead of time and stored in the refrigerator for up to a day before baking.
  • You can substitute the cream of chicken soup with cream of mushroom soup for a vegetarian version.

 

  • For extra flavor, add a dash of garlic powder or onion powder to the cabbage mixture.
